     Kicked up Mac N Cheese

Ingredients
1 stick real butter
2 handfulls flour
milk
8 ounces sharp white cheddar
8 ounces pepper jack
8 ounces fresh mozzarella
1 sweet onion diced fine
1 poblano pepper diced fine
1 whole garlic diced fine
 
1 tablespoon olive oil
1 package elbow macaroni
1 tablespoon white pepper
1 tablespoon garlic powder
bacon crumbles

Instructions
Melt butter in saucepan, add flour and whisk until becomes a paste. Let it cook for a minute or two, then slowly begin to whisk in milk. Add enough milk to make a white sauce, keep whisking, on low heat until bubbles.Add white chedder, pepper jack and mozzarella until it melts, whisking constantly.
Cook macaroni and rinse with cool water to remove some of the starch. Drain well. Transfer to large bowl, and pour cheese sauce over, mixing well. Add pepper and garlic powder.
In skillet over medium heat, saute onion, poblano and garlic together until tender. Add to cheese and macaroni mixture and stir well. Add 1 1/2 packages of bacon crumbles.
Transfer to glass casserole dish and bake at 375 for about 30 minutes or until bubbly but and you can smell the butter and cheese. Do not let edges brown. Remove & Serve.
