1 10 oz. package frozen French cut beans or 1 pound fresh green beans, French cut
4 tablespoons vegetable oil or ghee
1/2 teaspoon ginger, minced
1 green chili, minced
1/2 teaspoon turmeric
1/2 teaspoon salt, or to taste
1 teaspoon lemon pepper
1 cup shredded fresh coconut or 2/3 cup unsweetened dried coconut
Instructions
Soak unsweetened dry coconut in 1 cup hot water.
Drain water before using.
In a large frying pan heat oil or ghee. Add ginger
and chili and saute 1/2 minute. Add turmeric, salt
and lemon pepper. Add green beans. Lower heat,
cover and cook for 7 minutes.
Add coconut and a few tablespoons of water if dry.
Simmer 10 minutes.
