Preheat oven to 350 degrees. Spray a 9 inch round cake pan with vegetable cooking spray. Set aside. In a small bowl, combine buttermilk, applesauce, oil, egg, and vanilla. Mix well. Set aside. In a large bowl, combine flour, sugar, cocoa, and baking soda. Stir to break up lumps. Add buttermilk mixture; whisk until smooth about 1 minute. Pour batter into prepared pan. Bake until a toothpick inserted in center comes out clean, about 35 minutes. Cool in pan on a wire rack for 20 minutes. Loosen around edges, turn cake out onto rack, and cool completely. To prepare glaze, in a double boiler over simmering water, stir together glaze ingredients until the sugar dissolves. Add 1 Tablespoon of hot water if glaze seems too thick. Drizzle over top of cake. Let stand for 30 minutes.
