Put 1/2 Cup of cranberries to the side. Put the rest in a saucepan and add sugar, orange zest and water. Cook over low heat until sugar disolves and cranberries are soft - About 10 minutes.
Increase the heat to medium and cook unticl the cranberries burst - another 12 minutes. Reduce to low and stir in reserve cranberries. Add any sugar, salt and pepper to taste. Cool to room temperature before serving.
