Cut the cornbread into 1/2 inch slices. Spread each slice with mustard and sandwich the ham, cheese and peppers. Preheat the grill to medium heat and brush the grate with olive oil.
Brush both sides of cornbread sandwiches with the butter. Place sandwiches on the grill and close the cover and cook 2 to 3 minutes per side til cornbread is lightly toasted and cheese is melted.
