Cook ground beef, drain off fat and add taco seasoning and water amount on packet. Spray pie iron with Pam, put a corn tortilla down, a scoop of meat on top, then sprinkle of cheese and some chopped onion. Put another tortilla on top and close the pie iron. Cook until tortillas have crisped and browned and taco is heated through. Serve with remaining ingredients.
