Rinse chicken, remove gizzards. Place in soup pot; add enough water to cover the chicken. Add in carrots, celery and onion, chopped to your liking. Add in salt and pepper and herbs, just sprinkle in a little, you can add more later. Add more water to fill the pot. Boil gently for one hour. Remove from heat, let cool. Gently take out the chicken and pour through a strainer for ease in handling, saving the broth. Allow the chicken to cool to a temperature easy to handle. Remove the meat from the bones, chopping as needed. Add back to the broth. Add in egg noodles, salt and pepper to taste. Bring to a boil and cook until noodles are tender.
