Preheat oven to 350 degrees. Lightly mist an 8 inch pan with non-stick vegetable oil spray. For the cake, combine the apples and sugar and allow to rest for 10 minutes. Combine the flour, baking soda and optional spices in a mixing bowl. Stir the egg into the apples. Add the dry ingredients and nuts and stir until blended. Pour the batter into the prepared pan and bake for 35-40 minutes or until the cake is lightly golden around the edges and firm to the touch. While the cake is baking, prepare the topping. Combine the sugars and flour in a small sauce pan. Whisk in the water, and cook the mixture over medium heat, stirring the entire time until the mixture is thick. Remove the pan from the heat, whisk in the butter, vanilla and optional rum extract. Pour the topping over the hot cake. ALlow cake to cool for 15-20 minutes before serving.
