Fill 2-3 no 10 cans half way with damp, clean sand or earth. Bury potatoes in damp sand so they do not touch the can or each other. Put tin covers on top of cans; place in fire and cook for 45 minutes or until potatoes are soft. Serve potatoes in their jackets with salt, pepper and butter.

As an alternative, potatoes may be wrapped in wet newspaper, paper towels, wax paper, or even mud and baked in hot coals. A wrapping of wax paper makes the potato softer and moistens the skin.
