1 skinless rotisserie chicken, boned, 1.5 in. chunks
1 (10 oz. ) box frozen peas
1/3 cup heavy whipping cream
Hot basmati rice, for serving
Pita bread, warmed, for serving
Instructions
Spice Blend- Stir the ingredients together in a small bowl and set aside.
Sauce- Melt butter in a 12 in. nonstick skillet over medium heat. Add onion and cook, stirring frequently, until pieces just begin to turn gold, 5 min. Add garlic, tomato paste and spice blend, and cook 1 min, stirring constantly. Add tomato sauce and diced tomatoes and stir well. Add chicken pieces, spoon sauce over the top and bring to a simmer. Turn heat to low and cook uncovered until chicken is warmed through and sauce is flavorful, 10 min. Remove chicken to serving dish.
Shake excess water from peas. Add peas and cream to sauce in the pan, stir well, and heat through. Do not boil. Spoon sauce over the chicken. Serve with rice and pita bread, warmed.
