     FATTOUSH (Middle Eastern Bread Salad)

3 small pita breads, halved
6 tbs. olive oil
2 garlic cloves, crushed
Juice of 1 lemon
2 tbs. chopped flat-leaf parsley leaves
2 tbs. chopped cilantro leaves
2 tbs. chopped mint leaves
1 red onion, thinly sliced
5 tomatoes, seeds removed, roughly chopped
1 European cucumber, peeled, seeds removed, roughly chopped
2 small bell peppers, roughly chopped

Preheat oven to 375 degree farenheit.
Brush the bread pieces with 2 tablespoons of the oil. Place on a baking pan and bake for 10-15 minutes or until golden. Transfer to a plate lined with paper towels and cool.
Combine the garlic, lemon juice, herbs and remaining olive oil in a large bowl and season with salt and pepper. Add the onion, tomato, cucumber, pepper and toss to combine. Just before serving, break the bread into rough pieces, add to the salad and toss well.
