1/2 cup chopped green onion (white and green parts)
1 cup chopped and seeded cucumber
1 large tomato, seeded and chopped
2 Tbsp chopped fresh cilantro
1 cup plain low-fat yogurt (not fat free)
1 pound ground turkey
1/4 cup fine, dry bread crumbs
2 Tbsp plain yogurt
1 tsp turmeric
1 tsp ground coriander
1 tsp ground cumin
1 tsp fine kosher or sea salt
4 seeded hamburger buns
Instructions
To make the Raita, combine the first five ingredients in a large bowl and set aside. Brush the grill rack with oil. Prepare a medium fire in your grill.
In a large bowl, combine the ground turkey, bread crumbs, yogurt, and spices until well blended. Form into four 3/4-inch-thick patties. Place the patties on a plate set on a baking sheet to take out to the grill. Place the buns on the baking sheet.
Grill the patties, turning once, for 14 to 18 minutes, or until no longer pink inside and an instant read thermometer registers 165 degrees. During the last minute of grilling, toast the buns, cut sides down, on the grill rack.
To serve, place a patty on each bun. Top with dollop of the Raita.
