4 ears corn
|
|
3 Tbls EVOO
|
|
2 tsp lime juice
|
|
2 tsp chili powder
|
|
2 cans black beans, rinsed & drained
|
|
1 bunch radishes, thinly sliced
|
|
3 scallions, thinly sliced
|
|
1/3 cup chopped cilantro
|
|
4oz queso fresco or feta cheese
|
|
|
|
1 avocado, thinly sliced
|
|
blue corn chips (optional)
|
|
|
|
|
|
|
|
|
|
|
|

|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
1. Grill corn on med for 10 minutes.
|
|
|
2. In Lg bowl whisk EVOO,lime juice,chili powder & 1/2 tsp salt
|
|
|
3. Cut corn from cob into bowl. Add beans, radishes, scallions & cilantro. Toss Well
|
|
|
4. Top with queso & avocado on individual plates.
|
