     Allergy Friendly Basic Muffin Recipe

1 3/4 C Gluten Free flour
2/3 C sugar
2 t. baking powder
1 t. baking soda
1 t. xanthan gum
dash of salt
1/3 C shortening
1 T ground flax seed - 3 T warm water - let set to gel.
1 C of fruit, yogurt, or applesauce
1 C dairy free milk if to dry add more milk
nuts, chips, and flavorings to your taste.

Preheat oven to 425 degrees. Prepare muffin tin with liners or cooking spray.
In a mixing bowl cream flax seed gel, shortening, and sugar.
Mix together dry ingredients and add alternately with the milk. Fold in fruit, yougurt, or applesauce plus othe spices or flavorings.
Fill muffin tins to 2/3 full and Bake for 20-25 minutes or until tops and cracks are dry. Frost or serve plain.
