GREEN ONIONS - preferablly from garden, but store-bought will do.
Instructions
Thinly slice and discard root ends. With fingers, roughly measure solid parts and find equal amount of hollow parts. Slice here and discard or re-use tops.
Rinse well, patting dry with paper towels. Place on paper towels to dry 20-30 minutes. Slice solid ends thinly and hollow parts 2-3 times as thick.
Remove to a plate or baking sheet. Trying not to let pieces touch, place flat in freezer for 1-2 hours. Remove and scoop into a clean dry 20 ounce Coke bottle. Shake, and twist on lid. Return to freezer. Add, shaking, until full.
Shake out frozen and add to cooking eggs, sauces, mashed potatoes, etc. etc. as needed. They should not stick or clump. Do not thaw or use in salads or other cold items.
