     Sausage Quiche

Ingredients
1 (9 inch) frozen deep - dish pie crust shell
1 (7 ounce) can whole green chilies, split and seeded
1 pound hot bulk sausage, cooked and crumbled
4 eggs, slightly beaten
1 (1 pint) carton half and half cream
1 1/4 cups shredded Swiss cheese
 

Instructions
Preheat oven to 350 degrees. Line pie crust with split green chilies. Sprinkle sausage over chilies. Combine eggs, half and half cream, cheese, and 1/4 teaspoon each of salt and pepper. Slowly pour over sausage. Cover edges of pastry with thin strip of foil to prevent excessive browning. Bake for 35 minutes or until center sets and is golden brown. Allow quiche to stand at room temperature for 5 minutes before slicing to serve.
