     Zuni Stew

Ingredients
2 to 3 T olive oil
2 med onions chopped
2 cloves garlic minced
2 T ancho chili powder
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp oregano
28 oz chopped tomatoes with juice
2 and 1/2 c corn kernels, fresh or frozen
 
1 c green beans, cut in 1 inch pieces
1 lb mix of zucchini and summer squash
1/2 to 1 cup of roasted, peeled and diced green chilis (4 oz or 8 oz cans)
4 c pinto beans or 2 15 oz cans (or mix of pinto and chick peas)
chopped cilantro
salt and pepper to taste
grated monterey jack cheese

Instructions
Heat pan to med high. Add oil and saute onions for 2 mins, add garlic and spices, keep stirring and add liquid to prevent scorching. Cook until onions soften, about 4 mins. Add tomatoes, vegetables and beans. Add liquid (water or bean broth if beans are not canned)to your liking. Add cilantro just before serving.
