     Cottage pie (variation one)

Ingredients
2 white onions, 1 Red Onion, 1 shallot
4 cloves garlic 2 cloves black garlic
1/2 leek
800g lean beef mince
3 bay leaves, 1 tsp sage, 1tsp rosemary
1 litre of beef stock
1/2 bottle of merlot
3 slices black pudding
1/2 cauliflower, 1/2 broccoli
 
12 Mushrooms
12 carrots
8 large potatos, cream or milk (half pint)
1lb cheddar, 500g feta cheese
1 large suede
1 handfull chives
12 spring onions
12splashes of tabasco sauce
salt and pepper to taste

Instructions
Dice garlic, onion and shallot, fry in 1/2 tbs olive oil. Dice 1/2 leek into 1cm cubes add to frying pan. When all are translucent add mince and brown. When the mince is brown add bay leaves and wine. Then dice blackpudding finely and add to pan. Taste! add quartered mushrooms and stock.Once liquids have thickened place in heatproof bowl.
Trim coliflower and broccoli.to small florrets, top and tail carrots and cut in quarters lengthways. Place in a pan with a pinch of salt and preboiked hot water cook until dante. Peal and dice potatoes and suede add to a pan with salt and boiling water cook until soft.
Finely great cheeses together, finely slice chives and spring onions, set asside. When potatoes and suede are cooked strain water off and add milk onion, chives and cheese then mash.add vegitables to heatproof container and mix. then usinga desert spoon spoon potatoes onto the mince and veg mixture,creating a hill in. The middle using a fork level this out.
preheat oven to gas mark 8 then cookpie until the top is golden brown. Serve with red cabbage and beef and onion gravy.
