Ingredients
1 large cucumber
5 Thai finger chilis
1 scotch bonnet Chili
1 Scorpion Butch T chili
1 tbsp Tabasco sauce
1 tbsp fresh mint
1 cup of Cider Vinegar
a couple of splashes of Balsamic vinigar
1 tbsp Corriander
 
Salt and pepper
1 pealed potato

Instructions
WARNING!!!!! ----- This can cause serious pain, and can also be used as a painkiller, if you are light of heart then DO NOT TRY THIS at home Folks -------
Top and Tail the cucumber, half length ways and then half again (quartered) Place into a bowl. Grind some fresh sea salt onto the cucumber (Do not be stingy) Now peal a potato and set aside. Next Remembering that You cannot rub your eyes, nose or anything sensitive for a few minutes, cut all your chili peppers as small as possible leave the seeds in, this is NOT A LIGHTWEIGHT Dish. When finished place your chilis in with the Cucumber, now pick up your potato and scrub your hands with it like a bar of Soap (trust me you will be glad of this advice) Now wash your hands at the sink.
Into a jug mix your Tabasco and vinegar, by hand shred the mint and coriander and mix into your liquid, now pour over the cucumber, cover the dish with clingfilm and leave in the fridge to infuse. The longer you infuse it the Hotter it GETS.
