3 Boneless, skinless chicken breasts
|
|
Salt and pepper
|
|
2/3 cup finely chopped mango
|
|
6 tbs. mayo
|
|
2 tbs. lime juice
|
|
1 avocado
|
|
Large wraps (10 in.)
|
|
Romaine heart lettuce
|
|
1 large tomato, cored and sliced
|
|

|
|
|
|
|
|
|
|
|

Instructions |
|
|
-Cook chicken and shred into large chunks
-Put chicken in medium bowl, add salt and pepper,
mango, 3 tbs. mayo and lime juice
|
|
|
-Halve and pit avocado, cut into cubes and put in
different medium bowl and mash
-Add 3 tbs. mayo, salt and pepper and stir
|
|
|
-Put avocado mix on each wrap, leaving 2 inch border
-Put lettuce on, then tomato slices in a row in
center of lettuce
|
|
|
-Put chicken on top of tomatoes
-Fold like a soft taco, cut in half and serve
|

|
I didn't use the avocado and mango and it was good. Curious to try it with those 2 as well.
