Cook and dice chicken.
Mix mayonnaise, orange juice concentrate, and salt until well blended.
Add cranberries, diced celery, and chicken to mayonnaise mixture, coating thoroughly.
Add mandarin oranges, tossing lightly to make sure not to break them apart.
Cover and chill 12-24 hours. Just before serving, toast diced pecans and add to chilled chicken salad.
Serve with crusty rolls.
