     Boiled Pork With Vegetables In Gravy

Ingredients
Pork shoulder roast or pork hocks
Water to cover
2 Tbsp. pickling spice
1 carrot cut into large chunks
1 stalk celery cut into large chunks
1 small whole onion
salt & pepper to taste
Vegetables with gravy-
 
olive oil
onion chopped into bitesize pieces
celery chopped into bitesize pieces
carrots chopped into bitesize pieces
liquid from boiled meat
cold water
cornstarch
salt & pepper to taste

Instructions
Put meat & first amount of vegetables in a pot & cover with water. Put pickling spice in a tea ball or tie in some cheesecloth & add to pot. Season with salt & pepper. Bring to a boil, reduce heat & simmer until meat is tender & cooked through. Add more water during cooking if necessary. When meat is ready saute onions & celery in a little olive oil just to soften. Add carrots & just enough cooking liquid to barely cover the vegetables. Simmer until carrots are tender. Mix a little cornstarch in cold water & slowly add to vegetables until the desired thickness is reached. Adjust the seasoning with salt & pepper.
Serving Suggestions
I serve the vegetables in gravy over plain boiled potatoes. Make sure to pass the mustard with the pork.
