     Scotch shortbread cookies

1/2 lb. butter
1-1/2 cups flour
1/2 cup sugar
1/2 cup cornstarch

Cream butter and sugar. Add sifted flour and cornstarch, 1 Tbsp. at a time. Beat with electric mixer. When mixed, pat in ungreased 9 x 12 pan. Chill overnight.
Bake in cold oven at 300 for 1-1/2 hours. Near the end of the baking time, watch carefully for burning. When baked, sprinkle with sugar and cut in squares or wedges while still hot.
