Mix coconut, sugar, flour and salt together in a small bowl. Set aside. Beat egg whites in a medium sized bowl until frothy. Add extracts and mix until combined. Add coconut mixture and stir until combined. Drop by rounded tsp. fulls onto parchment paper. Shape with fingers so they are nice and round. Bake at 325 degrees for 18 - 20 minutes. Let cool completely before removing from pan. Dip bottom half of cookie into melted chocolate. Store in an air tight-container.
