Combine flour, baking soda and salt in small mixing bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixing bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in graham crackers. Drop by rounded Tbsp. onto ungreased baking sheets.
Bake for 7 - 9 minutes or until golden brown. Immediately remove from pan and wrap around wooden dowel using parchment paper to help hold cookie in place and to keep cookie clean. Cool completely on dowels. Turn 'taco shell' up, place meat (approx. 12 chocolate morsles on bottom of 'taco', pipe a line of 'sour cream' (marshmallow creme), sprinkle with 'lettuce' (gread dyd coconut) and top with 'chesse' (yellow dyed coconut).
