     Italian Eggplant - Low fat

Ingredients
1 small eggplant
1/4 c. Eggbeaters
1/2 c. Italian seasoned bread crumbs
1 1/2 c. spaghetti sauce
 

Instructions
Spray nonstick skillet with cooking spray. Peel eggplant and slice into circles. Dip circle in egg beater then breadcrumbs. Brown both sides in skillet. Place in casserole, putting a generous tablespoon of spaghetti sauce on each eggplant round. Stack if necessary. Bake covered at 350 degrees for 30 minutes.
