     Pumpkin Chocolate Snacking Cake

1/2 cup pureed pumpkin (no spices)
1 whole egg
2 egg whites
1 Tablespoon vegetable or canola oil
1 cup flour
1 teaspoon baking powder
1 teaspoon cocoa
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/4 teaspoon nutmeg
1/4 teaspoon salt
2/3 cup brown sugar, packed
1/2 cup chocolate chips

Preheat oven to 350 degrees. Spray a 9 x 13 inch pan with cooking spray and set it aside. In a large bowl, combine pumpkin puree, eggs, egg whites and oil and mix until smooth. Set aside. In another bowl, mix together the flour, baking powder, cocoa, spices, salt and brown sugar. Add dry ingredients into the wet ingredients and mix thoroughly, but try not to over mix. Stir in the chocolate chips. Pour into prepared pan and spread evenly. Bake for 15 - 25 minutes. You want a toothpick to come out clean when you poke into it. Then you know it's done. Cool completely and serve.
