1. Wash, stem, and core. Put them in a stock pot of boiling water
for about a min. Drain and put back into pot. Cover with lid and
just keep them in there.

2. Make your filling. Combine sugar and flour or clear gel into a
seperate pan. Add water and cook over med heat stirring
constantly. Once you see a boil add lemon juice and boil one more
minute.

3. Mix all your cherries into the filling.
|
|
|
4. Fill hot jars with hot cherry pie filling leaving 1 inch head space.
Wipe the rims clean. Remove any air bubbles and place your lids.
Thirty minutes water bath, cool 12-24 hrs.
I used flour instead of clear gel.

Taste great but when making a pie I would next time make mash up the cherries a bit. It was kind of weird eating whole cherries.
