     Cream Cheese Muffins

Ingredients
Filling
4 oz. cream cheese, softened
1/4 c. sugar
1/2t. grated lemon peel
1/8 t. vanilla
1 egg
Batter
1 egg
 
1/2 c. oil
2 c. flour
1/3 c. sugar
3 t. baking powder
1/2 t. salt
powdered sugar

Instructions
Mix filling ingredients with mixer & set aside. Preheat oven to 350. Grease bottom only of muffin tins. Beat egg, stir in milk & oil; set aside. Mix together flour, sugar, baking powder, & salt until blended. Pour liquids all at once into flour mixture, stir just until moistened. Fill muffin cups about 1/2 full. Spoon 1 t. filling onto batter. Top with batter to 3/4 full. Bake 30-35 minutes. Dont brown, should be light in color. Roll hot muffins in powdered sugar.
