Ingredients
1 beef boneless sirloin tip roast 3-4 lb.
1-2 T. olive oil
1 envelope Italian dressing mix
 

Instructions
Heat oven to 325. Place beef in shallow roasting pan. Brush with oil, sprinkle evenly with dressing mix. Bake uncovered, 1 1/2 -2 hours until thermometer reads 140. Cover beef with foil and let stand 15 minutes. Serve half of beef with pan drippings. Cover and refrigerate rest after cutting into julienne strips.
