Mix topping ingredients until crumbly. Press half of crumbs in a greased 9x9 glass pan.
Scald rhubarb 5 minute and drain well ( opt). Cook sugar, cornstarch, vanilla and water, stirring until thick and clear. Add a few drops of red food color. Stir it together with rhubarb. Pour into pan and topwith remaining crumbs. Bake at 350 for 1 hour or until brown.
