Preheat oven to 375. Mix the sugar and brown sugar with Crisco until well blended. Add the egg and vanilla and mix really well. Fold in pecans and butterscotch chips and stir well. Add honey and stir again.
Drop by rounded tsps about 2 inch apart on an ungreased coolie sheet. Bake at 8-10 minutes until lightly browned. Remove from sheet and cool on a rack. Makes 3 1/2 dozen cookies.
