     Grandma Bonnie's Stuffed Mangoes (green peppers)

Ingredients
6-7 mangoes (green peppers)
2 lbs ground beef
2 eggs
1 small diced onion
1 c cracker crumbs
salt and pepper to taste
1 jar tomato juice
 

Instructions
Cut mangoes lengthwise and rinse. Place mangoes in a pot and cover with water. Bring to a boil, drain and rinse with cold water. In a bowl mix together beef, eggs, diced onion, cracker crumbs and salt and pepper. Add a little tomato juice to moisten. Stuff mango halves with this mixture. Place in a baking dish and pour tomato juice over them but so as not to cover. Bake at 350 degrees for 1 1/2 hours.
Bonnie's third child, Jerry, is the only one of the 12 that lives outside of Ohio. When he is home to visit his family in the summertime, he asks his mother to fix this, his favorite recipe. The mangoes are fresh from Bonnie's garden.
