     Cranberry-pecan bread

Ingredients
2 ½ c sugar
4 ½ c flour
1 Tbl baking powder
1 teas baking soda
2 teas salt
2 eggs, well beaten
8 Tbl melted margarine
2 c orange juice - ½ c water [or more o.j.]
 
2 c broken pecans
grated rind of 2 oranges
3 c fresh cranberries [1 bag]

Instructions
Sift together first 5 ingredients, making a well in the center. Combine next 3 ingredients and pour in sifted mix. Stir to moisten. Fold in the last 3 ingredients. Pour into 4 buttered loaf pans. Bake at 350 for 1 hour.
