Mist 8x8 baking dish with vegetable oil spray. Spread teh sauteed apples across teh bottom of hte pan. Mix cream cheese and almond paste until smooth. Spread 1 generous tablespoon on each croissant half. Arange the halves, spread side down, on top of hte apples. In mixing bowl, whisk together eggs, egg yolk, half and half and milk. Pour over the croissants. Drizzle with melted butter and sprinkle with sugar and almond slices. Cover with plastic wrap adn refrigerate 6 hours or overnight. Oven to 325 degrees. Replace plastic wrap with foil and bake 20 minutes. Uncover and bake an additional 15-20 minutes or until the top is crisp, golden brown, and the egg mixture has set. Serve hot with plenty of maple syrup.
