If using a loaf rather than the rolls, cut it into 4 equal pieces. Cut each piece horizontally, slicing all but the last 1/2 inch so that the top and bottom pieces are hinged. Scoop out some of the soft bread from both the top and bottom, leaving the crust intact. Toss the sliced chicken with the Carmelized Onion-Apple Mayonnaise. taste and season with salt and pepper if necessary. Fill each roll with an equal portion of the chicken mixture and 2 slices bacon. Top each sandwich with several peels of cheese and a sprinkling of cabbage or lettuce. Roll each sandwich individually in wax or parchment paper. Sandwiches, kept cool, may be assembled several hours in advance.
