     Harvest Pasta Skillet

1 large onion
8 oz white mushrooms
1/2 Tbsp olive oil
1-15oz can pumpkin
4 c. vegetable broth
3/4 c. dry white wine
1/2 c. water
5 garlic cloves, pressed
3 Tbsp Moroccan rub
1/4 tsp salt
1 pkg whole wheat penne
1/4 c. shelled pistachios
1/2 c. heavy whipping cream
1 oz parmesan cheese
black pepper to taste

Thinly slice onion and cut in half. slice mushrooms. heat oil in skillet over med/high heat 1-3 minutes. Add onion and mushrooms. cook and stir 2-3 minutes or until onion is translucent. meanwhile in bowl, combine pumpkin, broth, wine and water; whisk well.
Add garlic, rub and salt to skillet; cook 10-20 seconds or until fragrant. Stir in pumpkin mixture. Bring to simmer; stir in pasta. Reduce heat to medium; cover and cook 9-11 minutes or until pasta is tender, stirring occasionally.
Coarsely chop pistachios. Turn off burner; stir in cream. sprinkle with cheese, pistachios, and black pepper.
Serving Suggestions
serving- 1 1/3 cup; protein per serving 14g- calories 350
