Break bread into pieces. Cook giblets in boiling salted water until done. Cut up into pieces. (8 - 10 slices of cooked bacon can be substituted for giblets)
Cook onion and celery in butter slowly. Add poultry seasoning and salt.
Toss bread, giblets, onion/celery, and broth together. Add broth if too dry.
Note: use 2 loaves of bread for a 20 pound turkey.
