     Picante Omelet Pie

Ingredients
1/2 cup picante sauce
1 cup monterey jack cheese, shredded (WIC food)
1 cup cheddar cheese, shredded (WIC food)
6 eggs (WIC food)
1 cup sour cream
Optional- Tomato slices (WIC food) and minced fresh cilantro
 

Instructions
Preheat oven to 375 degrees. Pour picante sauce into a lightly greased 9inch pie plate. Sprinkle with cheeses; set aside.
In a blender, combine eggs and sour cream; cover and process until smooth. Pour over cheese.
Bake at 375 degrees for 20-25 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting. Garnish with tomato and cilantro if desired.
