     Beer bread. also conversion to Cake Muffins

Ingredients
3 cups SELF-RISING FLOUR or Bisquik
12 oz. BEER (warm)
1 stick salted REAL BUTTER (melted)
5 Tbl. WHITE SUGAR
 

Instructions
Mix together flour and sugar (if not using self-rising flour, stir in also 3 teas. baking powder and 1 teas. salt)
Add beer and stir into a big sticky lump. Transfer to a greased loaf pan.
Bake in preheated 350 oven for 40 minutes, pour melted butter over it, and bake an additional 20 minutes. Let cool a minute and transfer to paper-towel-lined plate. Cool completely before slicing.
TO MAKE CAKE MUFFINS Same as above but ADD-1/2 cup chopped nuts, 1/2 cup raisins, 1/4 cup sugar and a splash of vanilla, 1 tsp cinnamon and mix in well. put in muffin pans and bake for 25 to 30 min at 350.
