     French Coconut Pie

Servings   2 - 8" pies

Ingredients
2 1/4 Cups white sugar
2 Tbs all-purpose flour
6 eggs
1 cup buttermilk
1/2 cup margarine, melted
1 cup flaked coconut
1 cup chopped pecans
2 unbaked 8" pie crusts
 

Instructions
Preheat oven to 350. In a small bowl, mix together the sugar and flour.
In a large bowl, mix the eggs with a wire whisk. Whisk flour mixture into eggs, until smooth. Stir in buttermilk.
Bake in preheated oven for 45 min. If making a 9" deep dish pie, bake for 1 hour
