Mix sour cream, cream cheese, dressing, and cheese into large mixing bowl.
Chop onions into small pieces and add to bowl.
Chop dried beef into small squares and add to bowl.
With spatula, place a medium sized portion of mixture into middle of tortilla.
Spread evenly, leaving about 1/2 inch on the outer edge.
Tightly roll tortilla. Cut in half.
Serve cold. Dip in salsa if preferred.
