     Ginger Snap Cookies

2-1/2 cups of flour
1 tsp of baking soda
1-1/2 tsp of ground ginger (I double it)
1/4 tsp cinnamon
1/4 tsp cloves
1/2 cup butter or margarine at room temp diced
1-3/4 cup of sugar
1 egg
4 tbsp molasses
1 tsp fresh lemon juice

Pre-Heat oven to 325deg. Grease baking sheets
Sift flour, soda, and spices into a small bowl and set aside.
Place the butter and 2/3 of the sugar (I use 1 cup) in a bowl and cream together until light and fluffy with electric mixer. Lightly beat the egg and stir in. Stir in molasses and lemon juice. Add to flour mix and mix in with a wooden spoon to make a soft dough.
Shape the dough in 3/4 inch balls and roll in the remaining sugar to coat and place them on the baking sheet spaced about 2inch apart. Bake 10-12 min or until cookies are just firm to touch.
