Preheat oven to 400 degrees. Carefully cut acorn squash in half vertically, and remove seeds. Lightly spray cut acorn squash with nonstick cooking spray, season with salt and pepper, and place cut side down onto a foil lined baking sheet. Roast at 400 for 40 minutes, and allow to cool before removing skin. Cut each half in half to achieve 4 equal servings.
