1 1/2 pears, peeled, cored and cut into 1/2 in cube
6 eggs
2tbs milk
1tsp salt
1/4tsp pepper
3oz cheddar cheese (about 1 cup)
Instructions
Preheat oven to 350. Cook the bacon until crisp
over medium-high heat and drain. Remove all but
1tbs of bacon drippings from the pan and reserve the
remaining bacon drippings.
Add the potatoes and saute until golden brown, about
8 min. Transfer to a plate. While cooking the
potatoes, add 2tbs drippings to a separate skillet
and saute pear slices until caramelized and
softened, about 8 minutes.
Whisk together the eggs, milk, salt and pepper. Add
1tsp bacon drippings or butter to skillet, heat over
medium-high heat and add the eggs, bacon, pear
cubes, potatoes, and 2/3c cheese.
Stir until eggs begin to set. Top with the
remaining cheese and pear slices. Bake in oven
until eggs are fully set, about 13 minutes.
