     Vodka Sauce and Penne

Ingredients
1 tablespoon extra virgin olive oil
1 tablespoon butter
2 cloves minced garlic
2 shallots minced
1 cup vodka
1 cup chicken broth
1 can crushed tomatoes
coarse salt and pepper
1/2 cup heavy cream
 
basil leaf
1 1/2 pound penne pasta

Instructions
1. Heat large skillet to medium heat. 2.Add oil, butter, garlic and shallots. Saute 3 minutes. 3. Add vodka. Take off flame before adding vodka. Reduce by 1/2 (2-3 minutes) 4. Add chicken broth and tomatoes. Bring to a bubble and reduce to simmer. Season with salt and pepper.
5. Cook pasta in water and simmer 15 minutes. 6. Stir cream in when pasta is done. When it returns to a slight bubble then remover from heat. 7. Drain penne and sauce and sprinkle with bay leaves. Add peas if you want to.
