     Jan's Split Pea Soup

Ingredients
16 ounces yellow split peas
1 Honey Baked ham bone (this makes delicious soup!)
1 1/2 cups sliced onions
1 teaspoon salt
1/2 teaspoon pepper
2 cups diced celery
2 cups diced carrots
2 cups diced potatoes
cubed bread, butter, garlic and parsley for croutons
 

Instructions
1. Rinse yellow split peas place in a large soup pot and cover with 2 quarts of water. Bring to a simmer.
2. Add one meaty Honey Baked ham bone, onions, carrots, celery, salt and pepper. Add enough water to cover the ham bone. Bring to a boil and then simmer for several hours until vegetables are almost tender. Add potatoes and cook until soft.
3. Take out ham bone and dice meat and return to pot. Cook for 20 minutes and serve.
4. Cut bread into cubes and brown in butter, parsley and garlic.Serve on top of the soup. These are delicious!
