2 cups lukewarm water
1 tablespoon yeast
3 1/4 cups flour
1 teaspoon (or less) coarse salt
cornmeal (optional for pizza-like crust)

mix all ingredients except cornmeal in a very large bowl. cover with tin foil and let dough rise for 2-5 hours.
split dough in half, making two loaves and covering with flour. lay on top of cornmeal and let sit for 1/2 hour. cut several cuts along the top of the loaf to allow steam to escape. bake 450 for 30-35 min.
allow to cool completely and wrap in tin foil for up to one week.
