     Carol's Pumpkin Roll

Ingredients
3 Eggs
2/3 C Libay Solid Pak Pumpkin
1C Sugar
1 TSP Lemon Juice
1 TSP baking Powder
3/4 C Flour
1 TSP Nutmeg
1 TSP Cinnamon
1/2 TSP Salt
 
1C Walnuts
1 C Powdered Sugar
8oz Cream Cheese
4 TBS Margine
1/2 TSP Vanilla

Instructions
Preheat oven to 375 Beat eggs for 5 minutes on high, then add sugar, pumpkin, and lemon juice. Add flour, baking powder, nutmeg, cinnamon, and salt. Place mixture in greased cookie sheet. turn out onto waxed paper coated with powder sugar and roll up Bake at 375 for 10 minutes.
Filling Add nuts, powdered sugar, cream cheese, margarine, and vanilla together. Mix well. Spread the mix over the roll, then re re-wrap the roll. Wrap in saran wrap then foil.
They can be freezed up to 6 weeks if wrapped tight enough
