     Carrot cake

Ingredients
2 c. Sugar
4 eggs
1 1/2 c. Oil
2 c. Plain flour
2 tsp. soda
1/2 tsp. salt
2 tsp. cinnamon
2 c. Grated carrots
 
ICING
1sm. Cream cheese
1box powdered sugar
1/2 stick butter
1tsp. Vanilla

Instructions
Mix dry Ingredients. Beat together sugar, eggs and oil. Fold dry ingredients into liquid mixture. Add carrots. Cook in 3 cake pans. Bake at 350 for 25-30 min. Mix ingredients for icing . Let cake cool a little and put on icing.
Serving Suggestions
I double the icing recipe. I think it needs more icing. A great carrot cake.
